Cashew Chicken Salad

Chicken salad is a staple favorite in our family and this recipe is such a fun twist on a classic! Creamy, fresh, and oh so delicious - your family is sure to love it too!


3/4 cup mayonnaise or Greek yogurt

1/2 tsp. ground ginger

1/2 tsp. salt

3 cups cubed or shredded chicken

1 1/2 cup red seedless grapes, halved

1 can crushed pineapple, drained

1 cup diced celery (optional)

1/3 cup sliced green onions (optional)

1/2 cup broken cashews


1. In a large bowl combine mayo, ginger and salt.

2. Stir in chicken, grapes, pineapple, celery, onions, and nuts.

3. Cover and Chill.


Enjoy! Makes 5 1/2 cups
